The Potsdam Food Co-op's Cheese of the Month for October will be offered during their 2nd Thursday Sampling on October 11th. From 3:30 - 5:30 pm you will have the opportunity to sample 3 varieties of cheese from the North Country Creamery at Clover Mead Farm in Keeseville, NY; Dill Farmer Cheese, Couronne, and Havarti. This month's trio are all made from the milk of the farm’s Jersey & Shorthorn cows. Other ingredients are limited to cultures and local herbs. North Country Creamery is a 100% grass-fed, non-GMO & Animal Welfare Approved Dairy. The Dill Farmer Cheese is a fresh-pressed cheese curd that melts like mozzarella. Pair the Dill Farmer Cheese with pale ales or moderately sweet red or white wines. Couronne is a semi-hard gouda-like raw milk cheese. It is cave-aged 6-8 months and has a slightly sharp taste. Pair Couronne with ales & white wines. Havarti is an aged, somewhat sharp, & flavorful semi-soft cheese that is both simple and versatile. Pair Havarti with hoppy beers or Pinot Noir. Suggestions: Try Dill Farmer Cheese in a breakfast burrito or other egg dishes. Add Couronne to a cheese platter with fruit and bread. Swap your favorite cheese for Couronne in a sandwich or use it in a hot vegetable dish. Havarti melts well and would be a good choice for grilled cheese sandwiches or in your favorite panini. Try it as a pizza topping or use it instead of cheddar in your mac and cheese recipe. The Potsdam Food Co-op is located at 24 Elm St. It is open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join. Committed to the community and local sustainability, its emphasis is on providing natural and organic foods with the practice of buying from local and regional growers and producers. There are daily offerings from the Co-op’s natural foods deli, and artisan breads and sweets from its bakery, which features a wood-fired oven.
