The Potsdam Food Co-op's featured Cheese of the Month for October is Sbrinz Alpage. Sbrinz Alpage is a hard cheese made from the raw milk of cows that graze on the varied flora of the Swiss Alps and produced only in the summer. It is aged for 30 months to develop its complex flavor, and then further aged for 3-6 months in a cellar deep in the mountain at Reichenbach. The cellar's humidity allows for the softening of the gold/brown rind and further develops the flavor. Sbrinz has a bloomy aroma, a crumbly hard texture and a rich, buttery umami flavor. Having been produced for centuries, it is considered by some to be the oldest cheese in Europe and the "grandfather" of gouda and parmigiano. Suggestions: Sbrinz Alpage is a unique addition to a cheese plate when served in chunks or möckli. Serve it with fresh or dried fruit. Often used in place of parmesan, it is easily grated onto pasta dishes, pizza or salads, and may be melted into risotto or au gratin dishes. The Potsdam Food Co-op & Carriage House Bakery and Deli is located at 24 Elm Street and open daily from 8am to 7pm with curbside service available.
