This month the Potsdam Food Co-op rolls out a new sampling program titled “Feature Friday”! Each Friday from 12 - 2pm items from the store and the Co-op’s bakery and deli will be highlighted and offered for sampling. The Co-op’s Cheese of the Month for December will be offered on Friday, December 13th. Between 12 and 2pm you will have the opportunity to sample French Double Crème Brie. This classic cheese is a soft ripened cheese that contains 60 - 75% butterfat, resulting in a creamier texture with a wonderful buttery flavor. Understandably known as "The Queen of Cheeses", this delectable cheese is made of cow's milk and named for the Brie region in France where it originated. Its rich buttery taste with nutty undertones is perfect for any number of dishes. It is an essential addition to any cheese board and makes a delicious and decadent appetizer when wrapped and baked in puff pastry. As a quick lunch, toss slices of Brie with hot pasta, sun-dried tomatoes, and black olives. Also try spreading it on focaccia and topping it with roasted tomatoes and fresh herbs as a starter. When not incorporated in a warm recipe, serve Brie at room temperature. Known as one of the great dessert cheeses, serve it with fresh fruit such as berries, pears, apples, grapes, or layer it with apple slices and serve it with warm caramel. Brie pairs well with sparkling wines, whites Chardonnay or Pinot Gris, reds Merlot or Syrah, or apple cider. The Potsdam Food Co-op is located at 24 Elm Street and open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
