The Potsdam Food Co-op's featured Cheese of the Month for November is Ski Queen Gjetost, Norway’s unique and versatile National Cheese. Ski Queen Gjetost is a pasteurized semi-firm Norwegian cheese made from a blend of cow and goat's milk and aged 1-2 months. This brown rindless cheese has a rich fudge-like texture and a unique sweet taste that is the result of the natural caramelization of milk sugar during production. Norwegians like to slice Gjetost wafer thin and serve it with salty butter on bread or toast. Although often considered to be a breakfast or dessert cheese, it is also suitable for cooking, flavoring sauces, or adding to fondues. Suggestions: Serve slices of Gjetost on a dessert board with apples, pears, and melon wedges, on open face sandwiches, or crackers. Its caramel goodness would be a delightful addition to an apple pie or a sauce served over ice cream, pancakes, or waffles. Add it to muffins, dessert sauces, fondues, or even your favorite meatloaf or meatball recipes for a sweet and unique flavor twist. The Potsdam Food Co-op & Carriage House Bakery and Deli is located at 24 Elm Street and open daily from 8am to 7pm with curbside service available.
