DESCRIPTION:Potsdam Food Co-op's Dinner's in the Bag! at the 1st Thursday Sampling on March 1st The March "Dinner's in the Bag!" at the Potsdam Food Co-op will feature Red Curried Lentils\, along with Meal-Kits to go. Samples will be offered by Big Spoon Kitchen at the 1st Thursday Sampling on March 1st from 3:30 - 5:30pm. Meal-Kits will also be available for purchase\, complete with the recipe and Co-op ingredients to make the meal at home. Coconut milk adds a silky richness to these creamy lentils made with red curry paste\, tomatoes\, and a perfect blend of savory and aromatic spices. Lentils not only add heartiness\, but also nutrition to this easy and flavorful dish. They are a great source of fiber and protein and are extremely high in folate\, iron\, and magnesium. Served with brown rice\, this recipe provides an incredibly substantial plant-based meal. Red Curried Lentils is a warm and comforting dish\, simple to make in about 40 minutes\; ready while the brown rice\, included in the bag\, is cooking. Vegan\, lactose-free\, and gluten-free\, it serves 4 - 6 and reheats and freezes well. Each month "Dinner's in the Bag!" will present a new recipe to try\, along with the ingredients to take home and create yourself.
