The Say Cheese Please! feature will be December's Cheese of the Month\; Brie D'amir. Brie D'amir is a French Double Cr me soft ripened cheese that contains 60 - 75% butterfat resulting in a creamier cheese with a wonderful buttery flavor. Understandably known as "The Queen of Cheeses"\, this delectable cheese is made of cow's milk and named for the Brie region in France where it originated. Its rich buttery taste with nutty undertones is perfect for any number of dishes. It is an essential addition to any cheese board and makes a delicious and decadent appetizer when wrapped and baked in puff pastry. As a quick lunch\, toss Brie slices with hot pasta\, sun-dried tomatoes\, and black olives. Also try spreading it on focaccia and topping it with roasted tomatoes and fresh herbs as a starter.
