It has a creamy yellow interior and an edible brown rind\, reputed to be the best part of the cheese! Despite being a humble cheese\, it holds its own with the finest specialty foods. Smoked Gouda is sensational with dark beer but also pairs well with Sangiovese Chianti\, Chateauneuf du Pape\, or Pinot Noir and Pinot Grigio wines. Suggestions: Serve Smoked Gouda on a platter with dried fruit\, spiced nuts\, dark chocolate\, and baked naan.
