Lamb Chopper is an aged gouda-type cheese made from organic pasteurized sheep's milk and produced in the Netherlands\, exclusively for Cypress Grove. Made with vegetable rennet and aged for at least 3 months\, it is semi-firm with an ivory color\, smooth texture\, and a waxed rind. Its flavor is buttery sweet in the early stages of ripening and develops a delightful caramel sweetness with nutty undertones as it matures. It is an excellent table cheese but also a good choice for cooking because it melts well. Pair Lamb Chopper with Sauvignon Blanc\, Chardonnay\, or Pinot Grigio wines\, or brown ales and porter beer.
