DESCRIPTION:The Potsdam Food Co-op's Cheese of the Month for February will be offered during their 2nd Thursday Sampling on February 8th. From 3:30 - 5:30 pm you will have the opportunity to sample Mexican Mix\, a combination of shredded Cheddar and Monterey Jack cheeses from Andrew & Everett. All Andrew & Everett cheeses are made in America's "heartland"\, and most are produced in or near Wisconsin. They specialize in "farm-to-table" cheeses that are converted from milk to cheese within 48 hours. Their milk is locally sourced from small self-sustaining family farms whose cows are free-range\, grass-fed\, and humanely treated. Their cheeses use non-animal rennet and are free of antibiotics\, growth hormones\, and preservatives. Mexican Mix contains no binders or fillers and is gluten-free. It goes well with apples\, pears\, onions\, and tomatoes. White wines such as Sauvignon Blanc\, Pinot Grigio or a Riesling are preferred pairings\, but pilsners or lagers are fine choices for beer lovers! Suggestions: Toss chunks of tomato and avocado with sliced onion\, cilantro\, and cucumber slices\; drizzle with a few tablespoons of fresh lemon juice and top with Mexican Mix. Spread Mexican Mix atop a quesadilla\, sprinkle it on chili or fresh salads\, use it in a grilled cheese sandwich\, or add it to an omelet or a favorite casserole. The Potsdam Food Co-op & Carriage House Bakery and Deli is located at 24 Elm St. and is open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join.
